Starters Puddings Other

Ingredients

100g butter, softened, plus extra for the tin
150g caster sugar
2 large eggs, beaten
200g self-raising flour
3 ripe bananas, mashed
1/2 tsp salt
75g walnuts chopped


Method

Heat the oven to 170C fan
Line a 23cm(9") loaf tin with greaseproof paper and brush with melted butter.
Cream the butter and sugar until light and fluffy, then beat in the eggs. Add the mashed bananas and nuts, then fold in the sifted flour and salt. Pour into the tin and bake for about an hour until a skewer comes out clean. Cool in the tin for 10 mins, then remove to a wire rack.
