Shortbread Biscuits with Chocolate Chips

Ingredients

125g Butter Softened
55g Caster Sugar
135g Plain Flour
1 tsp Vanilla
100g Dark Chocolate (Orange is Good
)

Method

Preheat fan oven to 160 C.
Whisk butter, sugar and vanilla until light and fluffy. Chop chocolate into small pieces. Fold flour and chocolate into the butter mixture. Roll mixture into a cylinder about 4 cm diameter. Wrap in clingfilm and chill for about 20 minutes.
Cut the dough into 1cm disks. Lay out on non stick surface (or non stick tart tin) and cook for about 10 mins.
When removed allow to cool before moving (they are soft when hot), then put on a rack to dry out. If they are not dry enough, cook again for 5 minutes
