Ingredients

A Rabbit or Duck jointed

Method

Cover the meat in a pan with olive oil at 85 C. Simmer for 45 mins.
Cover and transfer to an oven preheated to 110 C for 3 hours.
​Remove from oven and if not cooked sufficiently simmer until cooked.
Either shred and store in clarified butter (or the oil) or brown in a pan of oil and butter before serving.
