Ingredients

125g Butter Softened
125g Soft Brown Sugar
1 tablespoon Golden Syrup
1 egg yolk - beaten
180g Self Raising Flour
1 tsp Ground Ginger

Method

Preheat fan oven to 150 C.Whisk butter and sugar until light and fluffy. Mix in egg yolk and golden syrup. Fold flour and ginger into the butter mixture. Roll mixture into a cylinder about 3 cm diameter. Wrap in clingfilm and chill for about 20 minutes.
Cut the dough into 1cm disks. Lay out on non stick surface and cook for about 12 mins.
When removed allow to cool before moving (they are soft when hot), then put on a rack to dry out. If they are not dry enough, cook again for 5 minutes.
