Lemon & Cardamom Biscuits

Starters Puddings Other

Ingredients

100g Unsalted Butter Softened
125g Plain Flour
50g Caster Sugar
2 tsp Lemon Juice
Zest of 1 lemon 
1/2 tsp Ground Cardamom (see below)
1/4 tsp Baking Powder
pinch of Salt

Method

Make fresh ground cardamom by lightly pan roasting about 1/2 Tbsp of cardamom pods for a minute or two. Crush the pods to remove the seeds which can then be crushed in a mortar and pestle or grinder (mine is an ex coffee one).
Preheat fan oven to 150 C.Whisk butter and sugar until light and fluffy. Mix in the rest of the ingredients. Roll the mixture into a cylinder about 3 cm diameter. Wrap in clingfilm and chill for about 20 minutes.
Cut the dough into 1cm disks. Lay out on non stick surface and cook for about 10 mins.
When removed allow to cool before moving (they are soft when hot), then put on a rack to dry out. If they are not dry enough, cook again for 5 minutes.
